Sensory evaluation: Intense ruby red color, with hints of mixed berries with vanilla aroma. Full but delicate. Its vivacity predispositions it to longevity. The persistent aftertaste amplifies its elegance.
Food pairing: Serve at 18-20°C to accompany fine first courses such as: hearty meat pasta dishes and polenta. For main courses, it goes well with grilled meats and stews; one can even pair it with aged cheese and liver pâté. As a teaser, try it with a piece of dark chocolate and a cigar.
